Lushmallows
Lushmallows is a luxury marshmallow brand which was conceived and produced in North County Dublin. The idea for Lushmallows was born with a whisk, a crazy idea and a childhood love of fluffy meringues and marshmallow.
My marshmallows are made using a traditional French technique which combines egg whites with a boiling sugar syrup to create the perfect souffle like texture that is unforgettable. My mission is to elevate the humble marshmallow beyond the mass produced overly sweet confection we all know into something premium and sophisticated. They pair beautifully with coffee, a glass of wine or even champagne for that extra special occasion.
I believe in only using high quality, natural ingredients and time-tested techniques to deliver a superior texture, flavour and presentation. Each Lushmallow is handmade in small batches to achieve an elegant melt in your mouth consistency. Lushmallows are the perfect vehicle for never ending flavour combinations, but I have narrowed it down to 3 favourites for the Super Valu Food Academy. These are Raspberry & white chocolate, Passionfruit, pistachio & white chocolate, and Toasted coconut & dark chocolate.
I spent 10 years working as a fashion designer and this has informed how I approach Lushmallows, guiding my focus on a refined sense of presentation, premium ingredients and careful attention to detail in our packaging and flavours. This results in confections that look as good as they taste. I find pure joy in decorating every marshmallow by hand and packing them in our beautiful boxes. In addition to quality, I am deeply committed to sustainability resulting in packaging which is recyclable and compostable
