Le Paysan

Thierry Peurois grew up close to Saint-Malo, where his parents ran a traditional Boucherie-charcuterie business. Surrounded by the traditions of French food from an early age, Thierry developed a lifelong passion for quality ingredients and authentic, home-style cooking.

In October 1996, shortly after arriving in Ireland, the Brittany man set up Le Paysan in the heart of Greystones.  Le Paysan was a thriving delicatessen with a few tables on the sunny pavement outside. Following a strong family tradition, all the food was freshly made using the best of local ingredients.

Word quickly spread about the little French eatery helping to put Greystones on the map as a food destination. “It was crazy, at lunch we were packed and often people waited in their car for a free seat on our terrace!” Say Thierry.

In 2000, responding to the growing appetite for its food, Le Paysan expanded by opening a restaurant above the shop. It served earthy French country style lunches and dinners, both in-house and to take away.

In 2006, Le Paysan relocated to Bray and focused on producing premium gluten free ready meals, soups and pâtés. With the support of SuperValu stores and other independents retailers, the business developed a strong presence across South Dublin and Wicklow.

Due to unforeseen circumstances, Le Paysan ceased trading in 2010.

Drawing on everything he had learned from his previous experience in the retail sector and driven by his passion for cooking with quality local produce, Thierry began developing a new range of traditional pate and spreads. His vision was simple: to create delicious, honest food using excellent Irish ingredients, while bringing a taste of his French heritage to the Irish table.

In 2017, Le Paysan was reborn, moving into new premises at Wicklow Enterprise Park. Thierry began producing a range that included his much-loved Irish Chicken liver Pate, as well as Smoked Mackerel Pate, Smoked Salmon Pate, Irish Pork Rillette and a Vegetarian Roasted Red Pepper Pate.

Le Paysan successfully completed the Food Academy Program with the support of Wicklow local Enterprise Office, Supervalu Ireland and Bord Bia, helping the business take the next step in bringing its products to a wider audience.

Today, Le Paysan remains rooted in the same values that inspired Thierry from the beginning: Good food, quality ingredients, traditional recipes and a genuine passion for sharing great food with people.

From a small French Delicatessen in Greystones to a growing Irish food brand, the Le Paysan Story continues
